~Dark Chocolate Covered Nuts
~1/2 cup of dark chocolate chips
~ Peanuts
~Dried Cherries/ or Cranberries
~Cashews
~Seeds
I'm nuts about dark chocolate- so I wanted to share a quick and easy treat you can make anytime with what you have in your home! That's really how I come up with all of my recipes~ What am I in the mood for ? What do I have in the house! I encourage you to do the same!
So this is so simple and so satisfying you'll only need a bite and then you can tuck the rest back in the fridge for another time. Dark chocolate is my go to trick when need a little something! It works so great because a little goes along way. I always recommend you have chocolate marked 70% or higher! I read labels here also~ know what's in your food. Milk can interfere with the absorption of the beneficial antioxidants of the dark chocolate. Be sure not to have a glass of milk with dark chocolate and make sure there's not milk on the label.
I didn't really have measurements for this, please don't panic this is fool proof!
On this particular day last week I had an almost empty bag of dark choco chips... just about a half of a cup. What ever you have or if you want bigger batch use more. You can use a dbl boiler (pan with a little water simmering and than a metal or glass bowel sitting on it to melt chocolate) Or you can just put chips in a class measuring bowl and heat- stirring at least every minute so not to burn chips. Put out the items you would like to coat in chocolate, i.e. any nuts you love, seeds like sunflower or chia and some dried fruit. Be creative
Have a piece of parchment or foil ready on a tray or plate. When the chocolate is melted, start dumping the nuts and dried fruit into the bowl and stir until everything is well coated (A little chocolate goes a long way) when all the chocolate is coated pour out onto the wax/parchment /foil and place in the fridge to chill for 10 minutes or so. Take out and break up into smaller pieces and repack into a airtight container. I store in the fridge hidden :0)
